Guilt-Free Potato Salad Recipe
Ingredients:- 1 1/2 pounds red skinned potatoes potatoes, cut into 1-inch pieces
- 1 ounce bacon -- cooked, fat drained and crumbled
- 3 egg whites, boiled and coarsely chopped
- 1 small onion, chopped
- 1/2 cup celery, chopped
- 2 dill pickles, chopped
- 1 cup fat-free plain yogurt
- 1/4 cup low-fat mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon white wine vinegar
- salt to taste
- fresh ground pepper to taste
Method:
In large saucepan, place potatoes in enough water to cover, and bring to a boil. Reduce heat to medium and cook until potatoes are tender when pierced with a fork. Drain and place in a large bowl.
Add all remaining ingredients while potatoes are still warm and gently mix together. Refrigerate 1-2 hours to allow flavors to blend.
