How Many Calories in a Deviled Egg?

If your family celebrates Easter, you may find yourself with a refrigerator full of rainbow, hard-boiled eggs after this weekend. When the egg hunt and the basket-filling is over (be sure to follow food safety rules on on those egg hunts!), what can you do with all the eggs? The two most popular ways to use hard-boiled eggs are for egg salad sandwiches and, my favorite, deviled eggs.

We know eggs offer protein and lots of nutrients all packed into a tiny package. So, how many calories are packed into two halves of a deviled egg?

A) 80 calories
B) 140 calories
C) 190 calories
D) 220 calories

For 2 halves of a traditional deviled egg made with mayonnaise, milk, mustard, and chives or paprika for garnish, the answer is B)140 calories. Realistically, this number would vary between 120 and 150 calories, depending on your recipe and the amount of filling in each egg. Curious about the fat content? On average, this portion size would add 13 grams of fat to your daily total.

Two Recipes for Deviled Eggs

Deviled Eggs, also known as "Stuffed Eggs", are great appetizers and side dishes. They are a fantastic for potlucks, picnics, and summertime dinners. They are fairly easy to make, and best of all, fairly inexpensive. Deviled eggs can be made a variety of ways. Here are two unique recipes for deviled eggs.

Yolkless Deviled Eggs Recipe

This recipe serves: 12
Preparation time: 15 minutes

Ingredients:
  • 12 hard boiled eggs (discard yolks)
  • 1 cup non-fat cottage cheese
  • 1 tablespoon minced green onion
  • 1 tablespoon Dijon mustard
  • 2 teaspoon minced garlic
  • ¼ teaspoon curry powder
  • Paprika and ground pepper to taste
  • Parsley for decoration

Preparation Instructions:

1. Shell eggs and cut in half lengthwise. Remove the yolks and discard or save for future use. Place the egg white halves on a plate and set aside.
2. Blend the cheese, mustard, onion and spices in a blender or food processor.
3. Spoon the mixture into the egg white halves and sprinkle with paprika and pepper.
4. Decorate with parsley sprigs if desired.

  • 6 hard-boiled eggs (discard yolks)
  • 1/2 cup non-fat cottage cheese
  • 1 tablespoon mustard, any style
  • 1 teaspoon minced garlic
  • 2 tablespoons chives, minced
  • 1 tablespoon green onion, minced
  • Paprika and ground pepper to taste
  • Chives to decorate

Preparation Instructions:

1. Shell eggs and cut in half lengthwise. Remove the yolks and discard or save for future use. Place the egg white halves on a plate and set aside.
2. Blend the cheese, mustard, garlic, chives and onion in a blender or food processor.
3. Spoon the mixture into the egg white halves and sprinkle with paprika and pepper. Decorate with chives before servings. Makes 6 servings.
